Man, last weekend we did ribs and they turned out freaking great. smoked for 3 hours at 250-275, then roasted them after being smothered in honey.

Ran out of my parents rub and used this:

And it was awesome. Forgot to take pictures, but some of my best work.
I use those rub & they do work fantastic. They have/had one that was a chipotle cinnamon from the same maker & it was REALLY good.
I wonder if this isn't the same chipotle rub and they just changed the name. For years now I have been using my parents homemade rub (mainly because it was free but also really good) and when I ran out I was looking for the old chipotle rub that I had used way back when. But, I couldn't find it so started sifting through all the ingredients on their different rubs and found the sweet and smoky was the closest to what I was looking for, actually the little words say chiptle/cinnamon.

Anyway, yeah, it's good.
Well I'll be damned....I've never noticed the little writing under that. I bet it is the same one & they just changed the name.

I'll be rubbing mine up this evening & smoking em up tomorrow!

Does anyone have an opinion on wood pellet grills like Traeger? I don't have a lot of skill or experience so they kind of appeal to me.

I had actually never heard of them, but after looking them up, they seem pretty awesome and easy.

My only advice would be to make sure you want to spend that kind of money and more importantly enjoy spending a day on the deck cooking before investing in it.

Alright fellas since everyone seems to be somewhat depreseed lately, I give you a crawfish boil: I'll spoiler tomorrow.
So I tried this

But it wasnt enough heat. Apparently if u try this, people call you a yankee. Anyway, got it figures out.
I purged these things for like 2 hours in salt water before cooking them. Apparently, if they drink saltwater, it makes them take a [expletive], so you don't have poopy crawsfish.

5 minutes of boiling and 15ish min in the pot soaking.

The best part of crawfish boils is actually cooking it. The sausage and potatoes are good too. Crawfish are like a poor man's shrimp, and a pain in the ass to eat. But, I can see why people like them. They're not terrible.

Still, the cost, not including the start up equipment costs, was $60 for 33 pounds of crawfish, $12 for all the spices for the water, $4ish for the potatoes, $6 for the sausage $5 for the corn. So, that whole thing cost almost $100 to feed 6 people (probsbly could have fed another person or 2). That's not too bad, except you also go through probably half a propane tank if not more.

Blah, blah blah: They're expensive and don't have the best food. But, damn, they're fun to do.

Looking good.

I was going to revive this on Friday. I've got some ribs going right now. Should be done around 2ish. Gonna be a great day.

When I was little and we lived in Baton Rouge, my dad worked at LSU and we would go to these crawfish boils at Tiger Stadium where the table stretched the length of the field with piles of crawfish about ten feet high. I was about six years old so that memory is probably exaggerated.
