So because God had not laid down the ten commandments prior to Moses, it was totally okay for Eve to eat the apple because she didn't think it was a sin? But after she had given it to Adam, they hid from God and I guess she changed her mind, so then it was a sin?

So if I pass a car broken down on a highway, and don't offer to help because I made a promise to my parents to be home in time, and I need to honor my father and mother, but later feel bad that I didn't lend assistance, does that mean I've sinned? I didn't violate any commandments...
