I probably could find something on the menu....But scanning it quickly I didn't find anything that I wanted....But I saw a lot of ingredients on different sandwichs that I wanted on one sandwich.

Unfortunately no. The roasted red pepper sauce soaked its way into the bread a little. Most of the conversation I overheard between the sandwich makers was them talking about what they could take from one sandwich to make another better. Seems like they'd be more than happy to experiment and make whatever you wanted, but there was no build-your-own menu or anything like that.

That roasted red pepper sauce was great. Mixed w/ the garlic cream cheese it was one hell of a sandwich.

Yeah, it's not real experimental, but I've gotten the Amoré and replaced the au jus with garlic cream cheese. It was fantastic.
