Dang I missed the "how'd it turn out question." Good is the answer. I got brisket down to a science. Ribs are still iffy sometimes for me.

I agree AW it's going to be a great weekend for smoking. Not sure what I'm going to do yet but I'll head to the butcher shop this evening and get something.

So my buddy who's a cook made brisket the other day in the oven from start to finish and it was amazing. He took like 4 lbs of butter, tons of garlic cloves and fresh herbs, covered it with a foil tent in a roasting pan and let it go at 220 for like 16 hours. Then he browned the meat a little in a skillet and served it soaking in the butter/meat/garlic sauce from the pan with some King's Hawaiian rolls, brie cheese and fresh horseradish sauce. Nothing to do with smoking and the recipe is ridiculous between amount of butter and the time it takes, but it was one of the best things I've eaten lately.

I've often wondered, other than the excuse to drink and little bit of smoke flavor, why people didn't just use the oven instead of smoker.

I don't know. I feel the same way about a cast iron skillet. I'll kick the [expletive] out of any steak or burger you make on the grill. Every guy in America thinks they are some sort of grill master and they serve these dry (overcooked and all the fat drips through the grates into the grill abyss) burger patties that end up too small for the bun. I fully agree. Burgers on a cast iron skillet rock. You get a little of that juice that's come out of the burger and pour it on top of the burger every few minutes and you get a masterpiece.

Because smoking and grilling during the spring and summer kicks ass. Throw the [expletive] in the oven during the winter months!
