It's probably far cheaper for them to set up shop where they are now than in either of those neighborhoods. With the area growing quickly (Pappy's, Triumph, etc. drawing people in), they probably have a good opportunity to grow with the area. For me it's a quick ride up Compton so I really like the location, and if it was in Soulard there would be too much risk for the place becoming bro-tastic (maybe not, they don't serve bud light).
I didn't really mean for Urban Chestnut to up and move. Just that I think a biergarten is better suited for a more residential setting like that. Partly because there's more trees there, and that's an important part of a good biergarten.

For instance, if a brewer took over Molly's, that area between Molly's and the former Norton's would be perfect.
I agree. Drinking beer outside is the best, and the more parklike a setting the better. We tolerate the less than stellar beer at Square One and Augusta Brewery because they have excellent outside drinking settings. (though Square One's outside area is too small).
Schlafly is really lacking in this regard. Schlafly really needs to open up a biergarten in a residential neighborhood. They don't have to brew on premises--just bring it in from the Bottleworks. This is a million dollar idea. I'm telling you.

No guarantee though. The Stables had a nice set up outside set up - went bust. People are fickle about outdoors -either everybody wants to sit out there or nobody. It just takes one person in a place to say I'm cold I'm hot. (not me-I'll go outside 95% of the time if available). Then, a place can get the rep as the go-to outdoor hangout and when the weather is like it is now it is overcapacity and provides crappy service and gets bro-tastic as Cards says. And when weather is less hospitable people think of more traditional indoor hangouts.

Wonder what Schlafly Tap Room's rooftop is like?

The Stables also wasn't in the greatest area, and although I never tried it, I didn't hear the greatest things about their product. Schlafly already has a loyal following. Put it in an area that's already somewhat travelled--boom--one MILLION dollars.

Weather is always a concern. The Molly's/Norton's set-up is nice--fairly large outdoor area between two fair indoor spaces. Schlafly should buy Molly's out. I'll get the contract written up.

Hofbrauhaus in N. KY has a pretty successful biergarten. They have a decent area that has an overhang structure so you can still go out there if it rains, and they put up a tent when it gets cold. It's probably my favorite place on earth.

Nothing better than having a couple liters there, walking across the Purple People Bridge to watch the Cards kick the crap out of the commies and then walk back and have a few more liters then wake up on your bathroom floor with a toothbrush in your hand.

My beer drinking is settling in to a comfortable pattern after a few years of experimentation, often inspired by this thread. Basically my fridge is stocked with the following 3 brands of beer:
-Corona
-Budweiser
-Sam Adams Boston Lager - which is as hoppy as I will go these days.

I will supplement this stock with New Glarus, Schlafly products at any and every opportunity. I will also take advantage of any place that pours a good pint of Guiness. I'm done with the IPA's, I've just decided I don't care for them after getting to a point where I thought I was close. Once a month, I'll buy a random 6 pack of something interesting or a variety of other beers that are a bit different than I know I like.

I'm not going to deviate from this too much. This is a well rounded approach to beer I think. I'm down to 4 Sam Adams and 2 Budweisers in my fridge, so tonight I'll pick up a 12 of Corona and a case of Bud to restock. I'll nurse the Sam Adams this week - and pick up a 12 of Sam Adams next week and possibly Corona depending.
